Totaling 7 acres, Stephane Cornu farms 2 parcels in Crozes Hermitage adjacent to the famed Hermitage vineyard les Diognieres. The vines are between 20 and 40 years and are cultivated at low yields to achieve complete ripeness. The fruit is 50% destemmed and sees a 3-4 day premaceration before spending 3 weeks on the skins fermenting. Extraction is encouraged by both pigeage and remontage, while the malolactic fermentation takes place in small oak casks - about 20% new. This wine is bottled unfiltered.
