Toques et Clochers Print E-mail

Every year at the Sieur d'Arques winery, an auction of the wines of Toques et Clochers is held to repair and maintain the local church bells (Clochers) and architectural heritage of Limoux. The great chefs of France (Toques) auction the wines, and the auction is the setting for a major festival of food and wine in the Limoux area. Two barrels of the best wines from each of the qualifying 42 villages are auctioned, and the remainder of the crop is sold under the prestigious label "Signature Toques et Clochers".


Vin de Pays de la Haute Vallee de l'Aude Prestige
This project, begun in 1998, is a collaboration between Alan Gayda, a top winemaker and enologist from the Languedoc region, and Patrick Leon, Wine Director at Mouton Rothschild in Bordeaux. Located around Limoux, the vineyard sites are owned by Mouton Rothschild and small local growers. This cuv?e is vinified by both Gayda and Leon.

Limoux Chardonnay
Toques & Clochers winemaker Alain Gayda studied oenology in Beaune and returned to his native Limoux with a vision of producing Chardonnay which would rival the great whites of Burgundy. He convinced forward thinking growers to replant 4 prime vineyards with Chardonnay clones from Corton. Yields are severely restricted - roughly half the yields of Burgundy. Wines are fermented in new oak barrels with extended skin contact and b?tonnage. The wines are also racked and bottled by gravity with no pumping. Perhaps the finest Chardonnay produced outside the Cot d'Or, the wine is on the wine lists of 13 of 17 three star Michelin restaurants.
